Processing Notes

The honey process is a bit more complicated but well worth it to produce some of the best flavors. This process begins with washing the coffee in grapes, but once the floc grains are removed, the coffee is placed directly on the patio beds for 4-5 days. When it reaches appropriate humidity, it is taken and put into the solar dryer for an additional 15-18 days. This is called the honey process because it creates a "sweeter" grain.
